蘇打餅乾 Crackers -"Polly want a cracker?"



"Polly want a cracker?"


I don't have a pet parrot, but the voice "Polly want a cracker?" always comes up when I make crackers. I guess I watched Treasure Island too many times on TV when I was small.   Hummm...."Yo ho ho and a bottle of rum..." (don't put rum into the recipe!)

Recipe:

1 1/4 cup of all purpose flour                                              麵粉 1 1/4杯
3/4 tsp baking powder                                                       泡打粉  3/4茶匙
1/2 tsp salt                                                                         鹽巴      1/2茶匙
1/2 tsp sugar                                                                      糖          1/2茶匙
3 tbsp cold butter, chopped                                               奶油 (切塊)  45g
1 egg                                                                                 蛋           1顆 
1/4 cup milk                                                                       牛奶        1/4杯
coarse sea salt and cracked pepper for seasoning               海鹽, 現磨胡椒 適量

Steps:
1. Preheat oven to 205 Celsius
預熱烤箱 205度C


2. Use your food processor, pulse flour, baking powder, salt, sugar together 
and add butter to it. Pulse for a few times.
把麵粉, 泡打粉, 鹽巴還有糖放入食物調理機, 攪拌後加入切塊奶油


3. Add an egg
打到像上圖以後加入一顆蛋


4. When it's all blended, add milk
充分混合到下圖時加入牛奶

用全脂牛奶比較香 


5.  Gently pour milk into the dough mix
慢慢的將牛奶倒入食物調理機內

6. Pulse until the dough forms into a ball
繼續攪拌到像下圖後拿出來

7. Get your work station ready, use a rolling pin and roll out to 1/8" thick
拿出來後放在灑過麵粉的桌上, 用擀麵棍擀平到1/8"的厚度


8. Cut into round shapes/ square shapes, season with coarse sea salt and pepper
well, I used Fleur de Sel...
用餅乾壓模壓出喜愛的形狀, 之後灑上胡椒和鹽巴調味


我用了鹽之花

9. Use a fork to make holes to prevent cracking
放到烤盤紙上後用叉子戳出幾個洞 (防止烘烤時變形)


10. Bake for 10-14 mins until golden brown. Bon Appetit!
烤約10-14分, 或呈金黃色時就可以拿出來了! 請享用!
