Linda's Homemade Bagel 芝麻橘香貝果, 滿滿的堅果與橘皮香


Linda's ultimate homemade bagel!
Packed with Walnuts, Pine nuts, Sesame and Orange Zest.
  Infused with Orange Blossom water.


早餐不知道要吃什麼嗎? 來個自製手工培果吧!

簡單, 健康又少油!
(碎碎念: 12顆培果才加15公克的橄欖油捏)

"食物與廚藝 Food and Cooking"裡提到:  

" 貝果是以高筋麵粉製成,混合出非常硬挺的麵糰. (標準麵包麵糰每100份含65份的水; 貝果麵糰只含45-50份的水)"  --- 好紮實的麵包啊!


So, Here's what you need:

食譜:
4 cups Bread Flour             高筋麵粉     四杯
1 tbsp Sugar                       糖                一大匙
1 1/2 tsp Salt                      鹽巴            1 1/2 茶匙
2 tsp instant yeast               乾酵母         2茶匙
1 1/4 cup warm water         溫水            1 1/4杯
1tbsp olive oil                     橄欖油        1tbsp

You can also add:               另外可以加:
Cinnamon Powder               肉桂粉
Orange Zest                         橘皮
Orange Blossom Water        澄花水
Walnut                                 核桃
Pine Nut                              松子
Sesame                                芝麻

1. In a bowl, put Bread Flour, Sugar, Salt and Yeast together (quickly add water)
把高筋麵粉, 糖, 鹽巴還有酵母放入KitchenAid碗內, 馬上加溫水

2. Take out your Hook Attachment
用勾子打麵糰


3. 打打打 (這批我放了點肉桂粉)




4. Beat for 10 mins and it'll form to a round shape, then add olive oil
打約十分鐘後, 會變得像下面一樣, 然後加入橄欖油


5. Add olive oil and beat for another 5 minutes
加入橄欖油後繼續打約5分鐘


6. Then add your favorite nuts, zests, dried fruits...etc
然後加入喜愛的堅果與乾果



7. My bagels have A LOT of nuts and zests....beat for another 3 minutes
我都放超量的橘皮與堅果類, 繼續用機器打3分鐘


8. The dough should look like this
拿出來後長這樣

9. Wrap a plastic film around it and let it rise for 20 mins 27 Celsius
用塑膠布或保鮮膜蓋住, 發約20分鐘 27度C


10. Cut into balls that weigh about 100g, rest for 10 mins
切成100g的小球後用塑膠布蓋住, 再發10分鐘


11. Roll dough into logs and stick two ends back together (or you can use the easy way to poke a hole in the middle, but you'll have too much carbon dioxide in the dough) Too carbon dioxide causes stomachache...
把麵糰搓長以後, 把頭尾兩邊接回來.
或是用比較簡單的方式: 把麵糰中間戳個洞. 不過這方式麵糰中會有太多的二氧化碳, 吃完容易脹氣不舒服

*為什麼要做中間有的洞的麵包呢? 因為晚點在水煮過程中麵包一圈都可以煮到還有留空間膨脹


12 Cover with plastic film and keep it in the fridge overnight (6-8 hours)
用保鮮膜蓋住後放入冰箱過夜 (六到八個小時)

13. Next day, boil water, add a tsp of salt and cook each side for a minute (this is a cranberry bagel photo)
隔天水煮滾後加入一茶匙的鹽巴, 水煮培果 一邊約一分鐘 (這是蔓越莓貝果的入浴照)

煮好了拿起來放在架上晾乾

**為什麼要煮培果呢? 這樣皮才會脆脆, 裡面密實耐咬的! 


***但是為什麼COSTCO的貝果軟趴趴呢?
COSTCO是利用烘烤時噴蒸汽,  
Food and Cooking 提到:" 蒸煮讓麵糰鼓脹的程度超過發酵和沸煮, 
蒸出的外皮也比較薄, 做出較輕柔的貝果."


14. Brush on Egg whites and sprinkle sesame on top
刷上蛋白, 灑上黑白芝麻

15. Preheat Oven to 200 Celsius and bake for 20 mins
放進預熱的烤箱200度烤20分鐘
